hello
tonight i want to cook some tasty roasted vegetables but the only time i've done it before (apart from carrots and potatoes for roast dinners) was from one of those marks and spencers ready prepared packs.

can people give me good combinations of veg to use please?
i have some baby sweet pepper that needs using but apart from that im open, should i go for a Mediterranean style mix? what would i serve with that? what would add some wetness? or should i do a gravy friendly mix?
