cake advice please!

pretty_vacant [Edit] [Delete] 18:26, 3 July '10

i'm making a marmalade sponge, the recipe says to cook it for 1 hour 20 minutes at 175c (which seems like quite a long time to me). I just checked it after about 40 minutes and it is looking pretty ready, the knife i poked in it came out clean and all that. Should i just take it out? I don't want it to go all collapsey on me!

help me, cake bakers of the internet!

on a side note to make this thread more interesting: best type of cake? I am partial to a blue poppyseed cake, or maybe just a good old victoria sponge, yum yum
