what's the best way to sharpen knives? and kitchen based birthday gifts

so I bought a fancy pantsy knife block the other day, but only have one of those sort of cross over sharpening things..is that the best way or shall I get a one of those big stick jobs?

Also I have asked the inlaws for an ovenproof frying pan so I can do tarte tatin etc...they seemed to think this was awful, akin to asking for a tea towel or something...as people who have in the past wanted tin openers and oven gloves for Christmas I don't think they can comment but there we are. Is it that bad? and le creuset are best yes?
